You're right. It doesn't make much sense. The waste, it seems to me, is in using an OS that not only loads a bunch of unnecessary GUI crap on your system, but loads a bunch of broken GUI crap on your system.
For my laptop, which is my primary "workstation" these days, I run FreeBSD with AHWM for my window manager. AHWM is actually smaller and consumes less system resources than xterm. Heck, I think it's even lighter weight than rxvt (the terminal emulator I use -- which works better than xterm, by the way).
