This is going to be painful
I'm currently in this situation. One of the owners had, in the past, said that the standard company email format would be Rich Text (to prevent embedded code vulnerabilities).

Recently we upgraded all the workstations and when he overheard me telling another tech to configure Outlook for Rich Text he said that wasn't necessary. We discussed the problems with HTML, but he wouldn't hear it.

Last week I took another shot at "educating" him with a clipping from the TechRepublic blog about drive-by pharming, but I have yet to hear back from him.
