Skip the U3 drive. Buy an 8G drive so you'll have plenty of room.
Download PortableApps and install it on the drive, one of the many packages available is OpenOffice

I would like to load it onto a Thumb Drive, if it's possible; run it on there as well. How big a drive would I need?

You'll need a U3 drive, Sandisk makes them and a 2GB one will set you back around $9 at Walmart. Here's an article (http://www.zdnetasia.com/insight/software/0,39044822,61970892,00.htm) on the subject, which covers the 2GB Sandisk Cruzer.
