Have had good luck for years with Second Copy. Simple Intuitive interface and just works in the background. Newest version supports Copy of open files using Volume Shadow Copy.
For image of the operating system and programs, I use Paragon. Have a problem? Restore the Paragon image in about 20-30 minutes, and you're back to the state you were when you made the image or the differential image.
