Painless ...
- Shut down Word (including Outlook)
- copy your 2003 NORMAL.DOT into your 2007/2010 template folder in your personal profile. (you can find the location, and also rename/delete, using the File/Open or File/SaveAs dialog boxes. In the "Favorite Links" pane, click on "Templates".)
- delete or rename the current NORMAL.DOTM
- start Word

Word is designed to generate a NORMAL.DOT/M if one is not found in the personal profile template folder. Word 2007/2010 are additionally designed to look for a 2003 NORMAL.DOT. If one is found, but no NORMAL.DOTM, then it uses the settings (including styles) in the NORMAL.DOT when it generates the new NORMAL.DOTM.

So, if you don't like the new "improved" defaults in 2007/2010, this is your way to make use 2003 defaults.
