I have used floppy images to bootstrap DOS based environments. For example you may need a floppy image that boots in to DOS with MSCDEX CD-ROM drivers so you can load that old .ISO you may have laying around.

You may also want to read in all of your old floppies to images because the media will go bad. If only for historical or nostalgic reasons.
