My experience tells me that the majority of resources on any modern GNU/Linux system is eaten by the Graphical User Interface - usually Gnome or KDE.
Although, both are easy to use and user friendly - I highly suggest to look into XFCE as a replacement. OpenBox is another lightweight choice.
As to distro's, Debian or Slackware are my choice.
