I'd suggest getting portableapps and put that on your USB stick. You can then include all or most of those apps that ninite seems to have, but you don't need them installed on the PC, you just start them directly from the stick. You can also just copy them directly to a local drive on the pc and run them from there without the need for installation. Apart from that it can update the tool itself and the apps (at least the beta version can, the stable one I wouldn't recommend).
