For every example these "lookit me! I'm on a Mac / Google Apps, etc" companies I can point to 10 or more that are not and shall never be.

Can you imagine, for example, giving local admin rights to a call center full of phone bankers? Phone bankers to which their call queues, customer data "popped" on the screen and and call / screen recording is comprised of a carefully selected "suite" of software that must be opened in a certain order and maintained with some care or it borks?
