Not every consulting needs to work like this
I've got 3 customers, and that's it. One rolls off at the end of August. One wants me for 40/week, long term. Not much multitasking for me! 
But... that's rare.
I also should add, I've very carefully selected my customers (yes, I select my customers, and I deliberately turn down TONS of work... and I charge a high rate to discourage those who are not serious), and the net result is that most of these problems are not an issue for me, thankfully.
