Protecting Data Integrity with Viruses looming

Challenge:
In our organization we have identified a situation where a user have been infected with a malware/virus or experienced a system failure. Users typically save their data onto their local C drive.

In the case where there's a virus the data can't be transferred over to the reimaged machine. Because we can't with absolute certainty, tell if the files on the local drive were compromised.
With that said there are critical user data that cannot be used on the new due to potentially being compromised.

The Idea:
Create a GPO for folder redirection.

Question to the community:
Is this a sound idea? Or is there a better option you can think of?

Also we need consideration for laptop users, who are in and out of the office.
And yes we have a seamless domain wifi.
