Any ideas on how to practice windows 7 migrations and deployments?

I'm looking for ideas on how to workbench Windows 7 migrations using deployment tool kits and management systems like Altiris. The Idea is to do this offsite and be able to examine the consoles and processes. Aside from going through standard documentation I'm looking for a more hands on approach. Any suggestions?

You should be able to build both server and clients as virtual machines.
