After setting up your mailbox parameters, servers etc. in Outlook you do the following:
in outlook express go to FILE - IMPORT AND EXPORT and export your contacts, messages etc., one folder at a time to .pst files (remembering where you saved them to.
in outlook go to FILE IMPORT AND EXPORT, and reverse the process by importing the .pst files.

Just Open it up and it will tell you that it has detected an OE installation and do you wish to import the contents and settings. Click on the Yes Option and everything will get imported into Outlook and it should be your Default Mail Client after that.
