When I select the Minimize (for all windows and apps), they vanish (Hide?).
I have to use Windows task manager to switch.
How do I fix this?

Which Apps disappear?
Normally they show up on the Task Bar but if they are not often used they may be hidden and you need to click on the Blue Arrow Button to unhide them.
Not really sure what else could be happening here if that's not the case.

All screens/apps at all times vanish the moment they are minimized.
The task bar shows a load of apps but they do not relate to what I was working on.
For example, if I have several Explorer windows open and minimize them all, there is no indication of that anywhere that I can then select and Restore.
The PC did used to work normally for all of this but I had to let my wife use it when away on business and now I get this strange behaviour.

Right click on your taskbar and go into the properties.
Ensure that 'Group similar taskbar buttons' and 'Hide inactive icons' are unchecked.

Did as you said but still no change.
If I save multiples of anything such as Chrome there is no indication apart from the Windows Task Manager.
