2 nic's on a windows 2000 server

This is possible and should not be too complicated, however, you will not be able to use DHCP from this Windows 2000 server (it is my understanding that DHCP servers must have a single unique IP address).

Make your life easier by using two different makes of network cards.

The suggeswtion to change your subnet mask is not a bad security config (reduce chances of a rogue computer) but is not necessary.
