Access points

Is it wise to create an Access Point with just Internet access only, without encryption and security on our network?

All depends on your intent

First, from your post it is assumed that there will be nothing on the network that this access point is plugged into, such as putting it on a DMZ port or some other form of issolation.

Second, is the intent so that people in the area outside the company will also have open access?

If you are not doing this with the intent of providing free internet to people outside, I can not think of a single reason to set this up without security.

What did you have in mind?

Also, will this be set for issolation so one wireless client can not have access to another client?

Will work systems be on this, and why?

Do the work systems have firewalls installed?
