Depends on Outlook is set up. If using Personal Folders then you need to back up .PST files and if using Personal Address Books (rather than Contacts), then backup .PAB files.
Also, you may need to backup signature files as well (saved as .TXT, .RTF or .HTM format).

This is a really simple and handy utility.
If you have Oulook 2000 or newer this add in for Outlook will create back up files at regular intervals- you can specify the Outlook Data files (.pst files) to backup, how often, and where to back them up to.

Just install it - Open Outlook and it will run when you close Outlook, prompting you to configure.
After you close it it will make your first backup to the specified location and filename of your choosing.

To get the add in go to
http://www.microsoft.com/downloads/details.aspx?FamilyID=8b081f3a-b7d0-4b16-b8af-5a6322f4fd01&displaylang=en

If the long link doesn't work just go to Google and search for
outlook backup site:microsoft.com
It will be the top of the list.
