Can i create a document that people can sign on a touch screen?

I teach a basic computer class every two weeks and we have people sign paper agreements afterwards, I would like to take these agreements and put them on the computers they are using so that i can have them sign right on the Touchscreen using open office, or adobe, and email them directly to me. I need help understanding this process and the legality of this type of electronic signature. Im just trying to save paper, space and time! Also i would like to put these onto a tablet pc in the future. Any help on this would be greatly appreciated!! Thanks in advance guys!

Adobe .PDF comes to mind

When you have the full Adobe Acrobat you can author a document that has locked portions and editable fields. For you the editable fields could be a signature box and a date.

I sign things with a touchscreen at my bank so I am sure that it is legally binding. You just need to save read-only copies of each one for each student.

Is it simply an active box that they would use a stylus to sign, or would it require certificates? I just want to open the document, have them read it then sign it at the bottom. From what i have gathered this requires certificates, i don't want to have to do this for each new student that comes through?
