Cannot read google email in Outlook

We are running Exchange Server 2000 with SP3. When users receive Gmail (from google), it seems to be conflicting with the MIME in Exchange - the message will begin with

with the actual text of the message appearing later. There is usually no
subject, and attachments are not decoded. These emails are not spam or junk
mail; they are business-related.
Message encoding on the server is set to MIME - Provide message body as
plain text; Character sets for both MIME and non-MIME are Western European
(ISO-8859-1).

The business relies heavily on email sent from the internet, and as more users use google email, this problem becomes more frequent. Is there any workaround for this?

I suggest setting MIME type to Both rather than just Plain text which may be missing out at lor of stuff in the conversion from RTF/HTML mail.

Poster rated this answer.-It turned out the problem is with the Spam Filter we have in place (outsourced). But you helped me rule out the Exchange Server. Thanks!

Thanks, PJ Hutchison. We tried that today, but it didn't make a difference, but at least I can rule that out.

Does anyone have any other ideas? I'm stumped...
