Depends on you I think. I don't know a documentation for this but I can tell about me:
-100 workstations NT
-1 PDC
-2 BDC
-1 Standalone Server
-1 Linux Mail server (no web)
-125 users
-10 hours/day
I don't know if I can more than that without spend some money for some advanced tools.

There are several articles on IT staffing in the Tech Republic archives.

Try a search on staffing

A lot depends on the equipment, and the users.
Also, the quality of user training goes a long way to increasing the number of PCs that 1 person can support.

There was a time when the recommended ratio of
PC to Tech was 50 to 1. But that may have
doubled by now after all due to a lot of
downsizing tech have to support more these days
then in the past. But as far as I know there is
no rule to this. just remember one thing you
can only do so much in a day. As long as you
have good time management skills you can handle
a lot. Don't be bullied into thinking you
should be able to do more than your schedule
allows and give yourself a breather in there
also.
