Virtualize or Not - SBS 2008 Premium

So I have been throwing around the idea for a while to offer SBS 2008 Premium as a virtualized solution on 1 server versus 2... I was wondering if anyone has used this solution and/or their opinions on it...

For instance, a standard setup may look like this...

2 x 500 GB Hot Swappable Hard Drives
