Yes, you can resize the boot disk, but it will mean losing all the data on the boot partition.

To resize and keep and data, use a program such as Paragon Partition Manager to do it.

you cannot resize any partition by install disk, in fact, you can only delete the partitions and recreate larger partition. So if you do this, you will loss all data.
But you can use third party SW to resize directly without data loss, you may check http://www.partition-tool.com/partition-magic/resize-partition-on-windows-server.htm for detail operations.

By installation CD, you need to delete the partition and recreate larger partition, of course, it will cause data loss.
Partition magic server could help resize Server partition without data loss, see this guide,

Hi, you mean the boot partiiton or system partition? I believe the boot partition has no need to extend, sometimes people confuse these two concepts, so if you want to resize the partition of system, I suggest you to use the partition assistant server edition, here you can glance at this short tutorial http://www.partition-magic.org/windows-server-2003/resize-partition-windows-server-2003.html, the powerful freeware can help you and also the others out.
