I've been using a Moshi iVisor on my iPad 2 for a year and it's worked great. Was easy to put on, has been totally bubble-free, and hasn't had any impact on the sensitivity of the touch-screen.
This is another one of those screen protectors where only the outer frame adheres to your iPad and the middle of the protector doesn't actually stick to the screen (which is why you don't get any bubbles). You just have the align the protector on the top of your iPad and lay it down and that's it. The iVisor's one drawback is that it costs $10 more than competing products.
