All Cheese Considered: American Cheddar

Cheddar cheese is easily the most popular cheese variety on the planet, though many versions barely retain any qualities of the English original. Originally named for a small village in Somerset, England, near where the cheese was first formed and where most of the English farmhouse versions are still made, the term has come to refer more to the singular method of production than to its origin. The act of "cheddaring" is one of cutting, stacking, and restacking the curds in order to expel as much whey as possible, and in so doing, break the curds up into small pieces, which then become very smooth.
