High-Pressure Injection Technology Creates Extreme Cheese With Flavorful Promise

Heinz launched green-colored ketchup, and the product boosted the company's share of the ketchup market by almost 5 percentage points. Supported by research that showed blue and pink were deemed the "coolest colors" by kids and were preferred over other colors, ConAgra Foods recently launched Parkay margarine in two colors: Electric Blue and Shocking Pink. And now kids may soon be able to enjoy blue-colored cheese flavored with blueberries thanks to a new high-pressure injection process. This advanced processing technology gives cheese makers the ability to develop specialty products such as hot pink, bubble gum-flavored cheese or candy-colored cheese with lemon, grape or blueberry flavors.
