Cream filling contains real dairy ingredients, and Cr?me filling may not contain any ingredients that have seen the inside of a cow. By far the most common dairy ingredient in bakery fillings is nonfat dry milk (NDM). Medium-heat NDM is recommended because it has better solubility and fewer cooked notes.
