From its humble beginnings 57 years ago as an ice cream home-delivery service in Minnesota, The Schwan Food Company (Schwan) has grown to become a multibillion-dollar enterprise that relies on IT to sell its frozen foods from traditional delivery trucks, in grocery-store freezers, online, and in the foodservice industry. In 2001, the company began virtualizing its IT infrastructure to improve response time and cut costs, while migrating mission-critical applications from a mainframe to Intel processor - based servers.
