How do I set an sfter hours message Outlook 2010?

We are an exchange 2003/outlook 2010 shop. I would like to set my email to send an "out of office" message each day after I leave for the day. Some people on the night shift are getting upset that the IT staff (me) is not on duty the 14 hours a day we are open.

I would like to have it set once, not have to go to the out of office assistant each day.
