Migrating to Windows XP Office XP

Here is the situation:
Deploying Windows XP with Office XP to 500 PCs throughout NJ. Set up RIS
server to create ghost images for the three different Models. Migrating from Win98SE Office 2000
I have been given four weeks to start the deployment.I am now on the fifth
week. My images are good everything configured correctly and working fine.

Here is the problem:
I don't need to transfer all of the user settings, files, and folders. I was
going to try the USMT however I am having a problem getting the
configuration correct. It brings entirely too much over.
All I need are the following -
Outlook 2000 profile, just the profile with pst or pab files none of the
customizations.
Internet Explorer Favorites, moved to a new folder called old pc in the
favorites folder on the new PC. Again none of the users customizations.
Make the My Documents folder mapped to a separate drive, in this case U:\My
Documents which is the current drive anyhow so there files and folders in do
not need to be migrated from this folder.
Migrate Cookies.
Do a search of the Hard drive for particular file types and move them to a
folder called Old PC on the users desktop on the New PC.
I would also like it to transfer over the ODBC data connections. And Citrix
Web Client Connection settings, my wish list would be to rename the client
name for the Citrix Connection to the new computer name.

Any help would be greatly appreciated.
I have searched everywhere for a solution.

Thank you for your responses. However I resolved the issues myself using a variety of methods. I am using a customized USMT config, Sysprep.inf, and custom bat files.
