Backing up My Docs to a file server

I would like to set up a file server for backups on a few windows boxes. Basically I want to map my documents on 15 or 20 machines to this server in case something happens to these machines like a nasty virus infection.

It would also be nice to have the my documents stored locally on the machines in case something happens to the file server.

I know this cant be too hard but I’ve never needed to do something like this before. Could anyone point me in the right direction? TIA
