Cisco DiffServ

I have a fairly distributed WAN of T1s connected with Cisco routers. We are starting to play with VoIP and ViIP but without prioritazation the quality is spotty. I have wandered through plenty of Cisco information regarding DiffServ but am having trouble extracting the simple stuff.
I am really looking at a two-tier model: All voice and/or video traffic gets DSCP of something non-zero and all other traffic keeps the default. Is there a simpler config to implement on these routers than the examples they give?
Assume all traffic creating devices support DiffServ for this discussion.
