Defragging Priv.edb on MS Exchange 5

What is the procedure for using the defragmentation utility, edbutil.exe on the private information store on an MS Exchange 5 server? What services do I need to stop on the server? Is this a risky and recommended procedure? My current private info store is ~1.5 GB.
