Disaster recovery min. down time?

For the last few years I have enjoyed the ability to have a Ghost image of my servers boot drives. With our new server having a mirrored boot and running Windows2003 server I can’t create a boot disk to use with my Ghost Cast server. Hence now I must move to the real world disaster recovery plan. I was wondering what you all do for restoring a server whose mirror boot set up and died? Usually you can recover 1 drive of the mirrored set but my hypothetical is what if both drives died? What sort of recovery method would you use and what is the recovery time? Ghost allowed me to have a 15min recovery time…20 if I had to replace a drive…but now what?
