e-mail on an in-house server

I have 30 computers running Windows95 and Outlook Express (version 4.72, I think) receiving e-mail through an NT4.0 server with Avirt proxy server software connected to the internet and our ISP through a 56k modem. Right now Outlook Express is launched from, and e-mail is stored on those local machines. I would like to launch our e-mail program (I would consider changing programs) FROM the server instead of the local machine so it can be accessed and launched through an off-site remote connection (PC Anywhere), AND I would like to store all e-mail on that server as well. The considerations are access from both the office and off-site locations, ease of backing up 30 e-mail accounts from only one location, and virus checking. (On another note, I hate having Norton anti-virus running in the background on workstations, as it seems to interfere with some programs.) Any ideas?
