Ethernet and VOIP on same cabling?

Hi, I have an office with 20 phones, we are implementing a new VOIP Trixbox phone system but trying to save costs on the cabling.
The old phones are running on CAT3, would it be possible to use the current CAT5e cabling by splitting the pairs?
