How much time is enough

In a career move from one organization to another, is it a hard and fast rule to give the usual two weeks notice? If you have been with an orgainzation for any length of time, do you feel obligated to give them enough time to train/hire a replacement if you fill a role which is based on experience and business knowledge? If you are taking a new job, how much time is enough to give your current employer?
