How to stop a Sharepoint backup?

Our former Sharepoint admin had set up a backup in Central Administration 3.0. I see it in the Operations section, and it fills up the target disk every few weeks, writing 22GB a day. How can I either delete that backup job, or modify it to overwrite after 7 days instead of 60?
