Linux Newbie

I want to delve right into Linux Server. However, I am totally inexperienced with Linux.
1) Does Linux server loads as a GUI, or strictly Text?
If it’s text, what would be an excellent source for learning all the text based commands, that I would need to work with Linux?

2) What is the difference between BASH, and VI ? They are both text editors right?

I’m Eager, but Confused.
