MOSS 2007 and workflow

We’re working on scoping out a E-forms project, with a proposed solution of MOSS 2007 and a 3rd party workflow provider.

At this point, I’m planning a pilot – a single form – with MOSS and workflow app installed temporarily on a VMWare virtual machine. Form designed in Infopath, hosted on Sharepoint, with workflow handled by 3rd party app.

I’m having trouble getting my head around the complexity and scope of this project. Can anyone suggest papers or case studies that indicate how difficult a MOSS installation, configuration, forms design, etc. actually is?
