No longer with company

I am a Network admin for a medium (35 computers) company. They fired some people awhile back before I was hired and I was doing maintance on my server and saw that they still had email accounts and folders and files. Is there a good practice that I should follow when an employee leaves the company? I change the password for their account asap, but I don’t know what I should do about the emails and files and such. Thanks
