outlook contacts displaying full address path when creating a mail.

I have a outlook 2003 Exchange (Cached) when i create an email using contacts from my pst they are displayed as in the following text:
‘Joe Blogs’

how can i stop the above txt being displayed in the “To” field, when creating mails??
