Protocol Utilization measurements

Is it possible to characterize the amount/percentage of each protocol used on a network compared to overall traffic utilization? Can it be done for a particularly PtP link alone, or just the entire internetwork? We would like to determine how muchSAP and other traffic is running between nodes.
