Setting fonts in Outlook 2003

When I compose an email it appears in my selected font and size – Tahoma 10pt – in both my message and in my sent items folder. However, when it arrives in the destination inbox it appears in Times New Roman. It is still in HTML format, but the fonts are off. Any suggestions?
