Transferring email from one person to another.

I have an employee that only works one day a week and needs to have her email transferred to someone else that is going to take over her position. Is this possible without her being here to do an export?

We are running Exchange 2003 on SBS 2003. I am new to using Exchange, so please be somewhat detailed.
