What flavor of Linux?

I don’t know anything about Linux. Since I have off next month, I want to teach myself Linux.
My question is:
1. I see there is alot of flavors for a GUI for Linux Red Hat, xWindows…. Which one is the better or easy one.
2. Can I run more than one on the same Linux box without having 2 partition’s?
