What is the best way to test exisiting Web applications with IE 8?

We are planning to upgrade all client PCs with IE 8. We have some web based software apps that are not certified with IE 8. Other than using the compatibility mode of IE 8, what are some of the testing we need to perform on our web apps to ensure its functionality with the newer version of IE?
