Win2000 Restricted User Mode

I configured 15 win2000 PC’s to run in Restricted Mode in our school for security against pupils installing software. But I found that Apple/ClarisWorks 5 will not execute. So at the moment I have them in set to Power User Mode. How can I customise User modes for such cases.
