Break Outlook email link with Exchange

I have a situation where I need to stop Outlook 2003 from receiving mail from the users Exchange 2003 mailbox but still allow the use of calender & tasks. This is to allow a DMS to take over the management of email.
Is this possible? How?
I am running SBS 2003.
