Exchange 2000 Backup and Restore

I am running SBS 2000 with Exchange 2000 server and run a nightly bacup of the Information Store and system state using the Windows 2000 backup program. I would like to restore the backup to an off-site server for disaster recovery and single mailbox recovery. Can I restore the Information Store to a different Exchange Server? If so, what is the procedure?
