Exchange 2K outbound mail format

I have the challenging task of consolidating 3 exchange mail domains to one say (abc.com, def.com and ghi.com) domain in our AD. Our current AD domain is xyz.com. My question is, can Exchange 2K be configured to integrate with Win2K AD to retain the original email format of the three companies for outbound email? I know that you can technically retain the old company email format by simply changing the mx record of the respective old company domain and pointing to the new one common MX record and let Exchange handle the internal mail routing. But I could not find a way to segregate the 3 companies for outbound mail via Exchange and AD settings.
In AD I’ve setup the 3 companies under their respective OUs and user, workgroup and printer objects under their own OUs as well.
Any help would be greatly appreciated.
